If you’ve ever visited the Dominican Republic or have a Dominican restaurant in your neighborhood, you’ve probably encountered chicharrones de pollo—that crispy, golden, and utterly delicious fried chicken that brings pure comfort in every bite. Well, this is not just a dish, it’s a memory—one of those rare recipes that remind me of summers spent with my cousins in the Dominican Republic.

My mom and her sisters would ship my cousins and I to DR every Summer. We hated it at first but then as the days went by we lived the best time of our lives. We hated the mosquitos and when the lights went out (IYKYK) but we loved beach days, trips to the Colmado, and of course the food!
